This Fresh Grilled Corn Salad with Feta and Lime is a quick, easy summer side dish featuring charred corn, tangy lime, and creamy feta. Perfect for barbecues and potlucks, it comes together in under 25 minutes and is a crowd-pleaser.

Ingredients

Scale
  • 6 ears of fresh sweet corn, husks removed
  • 1/3 cup extra-virgin olive oil, plus more for grilling
  • 1/2 teaspoon kosher salt, plus more for seasoning
  • 1/4 teaspoon black pepper, freshly ground
  • 1/4 cup fresh lime juice
  • 1 teaspoon lime zest
  • 1/2 cup crumbled feta cheese
  • 1/2 cup finely diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh basil
  • Optional: 1 jalapeño, seeded and finely diced

Instructions

  1. Preheat your grill to medium-high heat (400-450°F / 200-230°C). Husk the corn and remove all silk.
  2. Brush the corn with olive oil and sprinkle with a pinch of salt.
  3. Grill the corn, turning occasionally, for about 10-12 minutes until charred on all sides.
  4. Let the corn cool slightly for 5 minutes, then cut the kernels off the cobs using a sharp knife.
  5. In a small bowl or mason jar, whisk together 1/3 cup olive oil, 1/4 cup lime juice, 1 teaspoon lime zest, 1/2 teaspoon salt, and 1/4 teaspoon pepper to make the dressing.
  6. In a large bowl, toss the warm corn kernels with the dressing. Add diced red onion, crumbled feta, cilantro, basil, and jalapeño (if using). Toss gently to combine.
  7. Let the salad sit for 5-10 minutes to allow flavors to meld. Adjust seasoning to taste before serving.

Notes

For best results, use fresh corn and fresh lime juice. Soak diced red onion in cold water for 5 minutes to mellow its bite. Fold feta in gently at the end to prevent it from dissolving. The salad can be made ahead and refrigerated for up to 3 days; bring to room temperature before serving.
