A refreshing and easy-to-make summer mocktail combining fresh peaches, ginger, and tea for a perfect balance of fruity sweetness and spicy zing.

  • 3 medium ripe peaches, peeled and sliced
  • 1-inch piece fresh ginger root, peeled and thinly sliced
  • 3 black or green tea bags
  • 2 tablespoons honey or agave syrup
  • 2 tablespoons fresh lemon juice
  • 4 cups cold water
  • Ice cubes, as needed
  • Optional garnish: peach slices, fresh mint leaves, or thin ginger slices

Instructions

  1. In a medium saucepan, bring 4 cups (960 ml) of cold water to a gentle boil. Add the sliced ginger and tea bags. Reduce heat to low and let steep for 8 minutes, uncovered.
  2. Remove the tea bags and ginger slices using tongs or a slotted spoon. Strain the liquid through a fine mesh sieve to catch any small bits. Set the tea aside to cool slightly.
  3. Peel and slice 3 medium ripe peaches. Optionally, leave the skin on for extra texture and nutrients.
  4. Add the sliced peaches to a blender and pulse until smooth, about 30 seconds. If too thick, add a splash of the cooled tea to help blend smoothly.
  5. In a large pitcher, combine the peach puree, brewed ginger tea, 2 tablespoons honey or agave syrup, and 2 tablespoons fresh lemon juice. Stir well to combine. Taste and adjust sweetness or lemon as needed.
  6. Refrigerate the mocktail for at least 1 hour to let the flavors meld and chill thoroughly.
  7. When ready to serve, fill glasses with ice cubes and pour over the mocktail. Garnish with fresh peach slices or mint leaves if desired.
  8. Optional: For a fizzy version, add about 1/2 cup (120 ml) sparkling water or club soda per glass just before serving.

Notes

Use ripe, fragrant peaches for best flavor. If ginger flavor is too mild, simmer ginger a little longer but avoid bitterness. The mocktail tastes best chilled after at least 1 hour in the refrigerator. For a vegan option, substitute honey with maple syrup. Frozen peaches can be used if fresh are out of season. Adding sparkling water just before serving creates a bubbly twist.
