  • 4 ounces cream cheese, softened
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon capers, rinsed and chopped (optional)
  • Freshly ground black pepper, to taste
  • Sea salt, a light sprinkle for finishing

Instructions

  1. Rinse the English cucumber and dry thoroughly. Using a sharp knife, slice into 1/4-inch thick rounds. Lay the slices on a paper towel and gently pat to remove excess moisture.
  2. In a mixing bowl, combine softened cream cheese with fresh dill, lemon zest, and lemon juice. Blend until smooth and fluffy using a fork or small whisk. Season with freshly ground black pepper to taste and a pinch of salt if desired.
  3. Using a small spoon or piping bag, dollop or pipe a generous teaspoon of the cream cheese mixture onto each cucumber slice, spreading gently to create a small mound.
  4. Tear or cut thin strips of smoked salmon and place a piece atop the cream cheese on each cucumber round.
  5. Sprinkle chopped capers, a tiny pinch of sea salt, and a crack of black pepper over the assembled rounds. Garnish with extra dill sprigs if desired.
  6. Arrange the cucumber rounds on a serving platter and refrigerate for 10-15 minutes before serving to let flavors meld and keep them cool.

Notes

Use English cucumbers for less watery, seedless slices to avoid sogginess. Softened cream cheese whips better and is easier to pipe. Assemble just before serving or keep ingredients separate to maintain freshness. For dairy-free, substitute cream cheese with a cashew-based spread. For vegan, replace smoked salmon with roasted red peppers or sun-dried tomatoes.
