Quick, colorful, and healthy pinwheel wraps filled with creamy hummus and fresh veggies, perfect for a light snack or lunch.

Ingredients

Scale
  • 4 large flour tortillas (10-inch)
  • 1 cup creamy hummus (homemade or store-bought)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup shredded purple cabbage
  • 1 cucumber, peeled and julienned
  • 1 carrot, peeled and shredded
  • 1 handful baby spinach leaves
  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Wash all veggies thoroughly. Thinly slice the red and yellow bell peppers into 1/4-inch strips.
  2. Peel and julienne the cucumber and carrot into matchstick-sized pieces.
  3. Shred the purple cabbage finely and toss it with the shredded carrot in a bowl.
  4. Add lemon juice and a pinch of salt to the cabbage and carrot mixture and toss lightly to combine.
  5. Place one large tortilla flat on a clean cutting board.
  6. Spread an even layer of creamy hummus across the tortilla, leaving a 1/2-inch border around the edges.
  7. Arrange a handful of baby spinach leaves evenly on top of the hummus.
  8. Scatter chopped fresh parsley evenly over the spinach.
  9. Layer the lemon-tossed cabbage and carrot mix evenly over the greens.
  10. Arrange cucumber strips and bell pepper strips in neat rows across the tortilla.
  11. Sprinkle a pinch of salt and freshly ground black pepper over the layered veggies.
  12. Starting from one edge, roll the tortilla tightly into a log shape, tucking in the fillings as you roll.
  13. Wrap the roll tightly in plastic wrap and chill for 15 minutes to firm up the shape (optional).
  14. Using a sharp knife, slice the roll crosswise into 1-inch thick pinwheels.
  15. Arrange the pinwheels on a serving platter and serve immediately or refrigerate until ready to eat.

Notes

Use room temperature tortillas to prevent cracking. Pat veggies dry to avoid soggy wraps. Keep veggie strips thin and consistent for easier rolling and slicing. Chill rolled wraps before slicing for neater pinwheels. Experiment with different hummus flavors for variety.
