A quick and easy recipe for colorful, layered popsicles made with fresh fruit purees, natural sweeteners, and sparkling water. Perfect for summer gatherings and a healthy, refreshing treat.

  • 1 cup blueberries, fresh or frozen
  • 2 tablespoons fresh lime juice
  • 23 tablespoons honey or agave syrup, adjust to taste
  • 1 cup sparkling water
  • ½ cup plain Greek yogurt (optional, can substitute with coconut yogurt for dairy-free)
  • A handful of mint leaves, finely chopped (optional)

Instructions

  1. Prepare the Strawberry Layer: In a blender, combine chopped strawberries, 1 tablespoon honey, and ⅓ cup sparkling water. Blend until smooth, about 30 seconds. Strain through a fine mesh sieve if a seedless texture is desired. Pour the puree into popsicle molds, filling each about one-third full. Freeze for 30-45 minutes or until firm to the touch.
  2. Make the Yogurt Layer (Optional): While the strawberry layer sets, mix Greek yogurt with lime juice and 1 tablespoon honey. Stir in finely chopped mint if using. Spoon this creamy mixture over the frozen strawberry layer. Freeze again for about 30 minutes to firm up.
  3. Create the Blueberry Layer: Blend blueberries with remaining honey and ⅓ cup sparkling water until smooth. Strain if desired. Pour this mixture over the firm yogurt layer (or directly over the strawberry layer if skipping yogurt), filling to the top of the mold. Insert popsicle sticks if molds require it. Freeze for at least 4 hours, preferably overnight.
  4. Unmold and Serve: Dip molds briefly in warm water (just the outside) for 10-15 seconds. Gently pull the popsicles out and enjoy immediately or store in a freezer bag for later.

Patience is key when layering to prevent colors from bleeding. Use cold sparkling water to maintain fizz. Dip molds in warm water briefly before unmolding to avoid breakage. Adjust honey or agave syrup to taste for sweetness. Frozen fruit can be used but should be slightly thawed before blending.
