A playful and refreshing summer recipe featuring star-shaped watermelon slices topped with a creamy, tangy cream cheese and berry mixture. Perfect for casual gatherings and light snacking.

  • 1 medium seedless watermelon (about 1012 pounds), chilled
  • 8 oz (225 g) cream cheese, softened
  • 2 tbsp honey or maple syrup (adjust to taste)
  • 1 tsp pure vanilla extract
  • 1 tsp fresh lemon zest
  • 2 tbsp fresh lemon juice
  • 1/2 cup (120 ml) Greek yogurt (optional)
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • Optional: 1/4 cup chopped fresh mint leaves
  • Optional garnishes: chopped pistachios or sliced almonds
  • Optional garnishes: drizzle of balsamic glaze

Instructions

  1. Wash the watermelon thoroughly. Slice off both ends to create flat surfaces. Cut the watermelon into 1-inch (2.5 cm) thick rounds.
  2. Using a star-shaped cookie cutter (3-4 inches), press firmly into each round to cut out star-shaped watermelon slices. Alternatively, cut freehand with a sharp knife. Arrange the stars on a serving tray.
  3. In a mixing bowl, combine softened cream cheese, honey or maple syrup, vanilla extract, lemon zest, and lemon juice. Beat with an electric mixer or whisk until smooth and creamy. Fold in Greek yogurt gently if using.
  4. Rinse all berries under cold water and pat dry. Slice strawberries if using. Set aside.
  5. Spread a generous layer of the cream cheese mixture over each watermelon star. Top with assorted berries. Optionally sprinkle chopped mint leaves and nuts on top.
  6. Chill the assembled watermelon pizzas in the fridge for 10-15 minutes before serving for best results. Serve cold.

Notes

If cream cheese is too firm, soften at room temperature for 30 minutes before mixing. Slice watermelon just before serving to prevent sogginess. Chill watermelon rounds before cutting for cleaner star shapes. Assemble close to serving time for best texture. Variations include using vegan cream cheese and coconut yogurt for dairy-free, swapping berries for seasonal fruits, or adding a pinch of cayenne for spice.
