  • 1 cup (120g) all-purpose flour
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini (about 1 medium zucchini), unpeeled and squeezed to remove excess water
  • 1/2 cup (90g) dark chocolate chunks, bittersweet or semi-sweet, chopped
  • 1/4 cup (60ml) vegetable oil

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease an 8×8-inch (20×20 cm) baking pan and line it with parchment paper, leaving some overhang for easy lifting.
  2. Wash and trim about 1 medium zucchini. Shred it finely using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel and squeeze out excess moisture until damp but not dripping.
  3. In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt until no lumps remain.
  4. Stir in the granulated sugar until combined.
  5. In a small bowl, whisk together the eggs, vegetable oil, and vanilla extract until lightly combined.
  6. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Fold in the shredded zucchini and chopped dark chocolate chunks.
  7. Scrape the batter into the prepared pan and spread evenly with a spatula. Tap the pan gently on the counter to remove air bubbles.
  8. Bake for 25-30 minutes, starting to check at 25 minutes by inserting a toothpick into the center. It should come out with a few moist crumbs but no wet batter.
  9. Let the brownies cool in the pan on a wire rack for at least 20 minutes before lifting out with the parchment overhang.
  10. Cut into 9 squares with a sharp knife, wiping the knife clean between cuts for perfect edges.

Notes

Do not overmix the batter to keep brownies fudgy. Squeeze zucchini well to avoid watery batter. Use quality cocoa powder and chocolate for best flavor. Check baking time carefully to avoid drying out. Let brownies cool fully before cutting. If batter is too thick, add 1 tablespoon milk to loosen without affecting fudginess.
