  • 1 cup (200g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ¾ cup (90g) all-purpose flour
  • ¼ cup (30g) unsweetened Dutch-process cocoa powder
  • 2 teaspoons espresso powder
  • ¼ teaspoon salt
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch (20×20 cm) square baking pan with parchment paper, leaving an overhang on two sides.
  2. Melt the butter in a microwave-safe bowl until fully liquid but not boiling, about 45 seconds to 1 minute. Let it cool slightly.
  3. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and glossy.
  4. Add eggs one at a time, whisking thoroughly after each addition. Stir in the vanilla extract.
  5. In a separate bowl, sift together the flour, cocoa powder, espresso powder, and salt.
  6. Gradually fold the dry ingredients into the wet mixture with a spatula until just combined, avoiding overmixing.
  7. Pour the batter into the prepared pan and smooth the top. Sprinkle flaky sea salt evenly over the surface.
  8. Bake for 25-28 minutes, checking at 25 minutes with a toothpick; it should come out with moist crumbs but not wet batter.
  9. Let the brownies cool completely in the pan on a wire rack for at least 1 hour.
  10. Use the parchment paper overhang to lift the brownies out of the pan, then cut into 16 squares and serve.

Notes

Do not overbake to maintain fudgy texture. Fold dry ingredients gently to avoid cakey brownies. Let brownies cool completely before slicing. Espresso powder can be substituted with instant coffee granules but espresso powder is preferred for richer flavor. Sprinkle flaky sea salt on top for best flavor contrast.
