These smoky bacon-wrapped jalapeno poppers are the ultimate game day appetizerโ€”crispy, creamy, spicy, and absolutely irresistible. Made with a three-cheese blend and a secret touch of smoked paprika, they come together in under 45 minutes and always steal the show.

  • 12 fresh jalapeno peppers
  • 8 ounces cream cheese, softened
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup Monterey Jack cheese, shredded
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 12 slices thin-cut bacon
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1/2 cup sour cream
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon smoked paprika
  • Pinch of salt

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with aluminum foil for easy cleanup, then place a wire rack on top. Set aside.
  2. Wash the peppers thoroughly and pat them completely dry with paper towels. Using a sharp knife, cut each jalapeno in half lengthwise, right through the stem. Use a small spoon to scrape out the seeds and white membranes. Wear gloves if possible.
  3. In a small mixing bowl, combine the softened cream cheese, shredded cheddar, shredded Monterey Jack, smoked paprika, garlic powder, and onion powder. Mix until everything is well combined. Taste and add a pinch of salt if needed.
  4. Using a small spoon or a piping bag, fill each jalapeno half with the cheese mixture. Don’t overfillโ€”the filling should be flush with the cut edge of the pepper.
  5. Take one slice of bacon and wrap it tightly around each filled jalapeno half, starting at one end and overlapping slightly as you go. The bacon should cover the entire pepper. Trim excess bacon with kitchen shears if needed. Secure the end by tucking it underneath or using a toothpick.
  6. Lightly brush the wrapped peppers with olive oil. Sprinkle with a tiny pinch of black pepper if desired.
  7. Arrange the wrapped poppers on the wire rack, leaving a little space between each one. Bake for 20-25 minutes, or until the bacon is crispy and golden brown. For extra crispy bacon, switch the oven to broil for the last 2-3 minutes, watching carefully.
  8. Remove from the oven and let the poppers rest on the wire rack for 5 minutes. Transfer to a serving platter and serve warm.

Notes

For extra crispy bacon, par-cook the bacon slices in the microwave for 30-45 seconds before wrapping. To reduce heat, remove all white membranes from the jalapenos. For a milder version, use mini sweet peppers instead of jalapenos. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a 350ยฐF oven for 8-10 minutes.
