Instructions

  1. Rinse shrimp under cold water and pat dry thoroughly with paper towels.
  2. Bring a large pot of salted water to a boil. Add linguine or spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving 1/4 cup (60ml) pasta water.
  3. Heat olive oil and 2 tablespoons butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant and lightly golden, about 1-2 minutes.
  4. Add shrimp to the skillet in a single layer. Sprinkle with salt, pepper, and red pepper flakes if using. Cook for 2 minutes on one side, then flip and cook another 1-2 minutes until pink and opaque.
  5. Pour in dry white wine and simmer for 2-3 minutes, scraping browned bits from the pan.
  6. Stir in lemon juice and remaining 2 tablespoons butter. Let butter melt and sauce thicken slightly. Adjust seasoning with salt and pepper if needed.
  7. Toss cooked pasta into the skillet, adding reserved pasta water a little at a time to loosen the sauce. Mix in chopped parsley and lemon zest.
  8. Serve immediately, garnished with extra parsley or lemon wedges if desired.
