A quick and flavorful 30-minute ground beef Korean bulgogi bowls recipe that combines savory-sweet bulgogi flavors with fresh veggies and rice, perfect for busy weeknights.

Ingredients

Scale
  • 1 pound (450 g) ground beef (85% lean)
  • 1/4 cup (60 ml) soy sauce
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon toasted sesame oil
  • 2 green onions, thinly sliced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 medium carrot, julienned
  • 1/2 cucumber, thinly sliced
  • 3 cups (720 g) cooked jasmine rice
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Cook the rice: Rinse 1 1/2 cups (270 g) jasmine rice under cold water until water runs clear. Cook according to package instructions or in a rice cooker. Fluff with a fork and keep warm.
  2. Prepare the marinade: In a mixing bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, toasted sesame oil, and red pepper flakes if using until sugar dissolves.
  3. Marinate the ground beef: Add ground beef to the marinade and mix well. Let rest while prepping veggies. Do not marinate longer than 10 minutes.
  4. Prep the veggies: Thinly slice green onions, julienne carrot, and slice cucumber. Keep separate for assembly.
  5. Cook the beef: Heat a large skillet over medium-high heat. Add marinated beef and cook, breaking it up, until browned and cooked through, about 6-7 minutes. Avoid burning the sugar by adjusting heat as needed.
  6. Assemble the bowls: Divide warm rice into 4 bowls. Top with cooked beef, then arrange carrot, cucumber, and green onions on the side. Sprinkle with toasted sesame seeds.

Notes

Do not over-marinate ground beef to avoid mushy texture. Use medium-high heat to caramelize sugars without burning. Toast sesame seeds separately for better flavor. Splash water or extra soy sauce if beef looks dry while cooking. For gluten-free, substitute soy sauce with tamari.
