Healthy High-Protein Black Bean and Corn Quesadillas

These quesadillas combine black beans, corn, and cheese in whole wheat tortillas for a quick, healthy, and protein-packed meal perfect for weight loss and busy days.

Ingredients

  • 4 large whole wheat tortillas
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen, thawed)
  • 1 cup (about 100 g) shredded sharp cheddar or Monterey Jack cheese
  • 1 small red bell pepper, finely diced
  • 2 green onions, thinly sliced
  • 2 tbsp fresh cilantro, chopped (optional)
  • 1 tbsp olive oil or avocado oil
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • Optional: fresh lime juice, Greek yogurt or guacamole for dipping

Instructions

  1. In a mixing bowl, combine the drained black beans, corn kernels, diced red bell pepper, sliced green onions, and chopped cilantro. Sprinkle in the cumin, smoked paprika, salt, and pepper. Toss gently to mix evenly, keeping beans mostly whole.
  2. Heat a non-stick skillet or cast-iron pan over medium heat and add 1 tablespoon of olive or avocado oil. Warm until shimmering but not smoking.
  3. Place one whole wheat tortilla on a plate. Spread about ½ cup (120 ml) of the bean and corn mixture evenly over half of the tortilla. Sprinkle ¼ cup (25 g) of shredded cheese on top of the filling. Fold the other half of the tortilla over to create a half-moon shape.
  4. Carefully transfer the folded quesadilla to the hot skillet. Press down gently with a spatula. Cook for 3-4 minutes until the bottom side is golden brown and crispy, then flip carefully and cook the other side until golden and cheese is melted.
  5. Repeat the process with remaining tortillas and filling, adding more oil to the pan if needed.
  6. Slice each quesadilla into wedges. Optionally, squeeze fresh lime juice over the top or serve with Greek yogurt or guacamole for dipping.

Notes

Keep heat medium to avoid burning tortillas before cheese melts. Press gently with spatula while cooking for even melting and crisping. Avoid overloading filling to prevent soggy tortillas and difficult flipping. Cheese can be swapped for plant-based alternatives for vegan version. For gluten-free, use corn tortillas. Leftovers reheat best in skillet to maintain crispness.
