  • ½ cup (125 g) natural creamy peanut butter
  • ⅓ cup (113 g) honey
  • ½ cup (90 g) mini chocolate chips
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Gather and measure ingredients: 1 ½ cups rolled oats, ½ cup peanut butter, ⅓ cup honey, ½ cup mini chocolate chips, 2 tablespoons ground flaxseed, 1 teaspoon vanilla extract, and a pinch of salt.
  2. Combine the wet ingredients: In a mixing bowl, stir together peanut butter, honey, and vanilla extract until smooth and well blended. Warm peanut butter slightly if stiff.
  3. Add dry ingredients: Toss in oats, ground flaxseed, chocolate chips, and salt. Stir thoroughly until evenly coated and mixture is thick and slightly sticky. Adjust with honey or nut butter if too dry.
  4. Shape the bites: Form mixture into 1-inch balls using hands or a small cookie scoop. Place on parchment-lined baking sheet or plate. Yield about 18-20 bites.
  5. Chill to set: Refrigerate for at least 30 minutes or freeze for 15 minutes to firm up before serving.

Notes

If mixture is too dry, add more honey or peanut butter one teaspoon at a time. If too sticky, add more oats or flaxseed. Warm peanut butter slightly if stiff. Chill bites to firm up before serving. Store in airtight container in fridge up to 1 week or freeze up to 3 months.
