forgotten cookies - featured image

These forgotten cookies are a happy accident turned into a beloved recipe. Made with simple ingredients and no mixer, they’re light, crispy on the outside, and chewy on the inside—perfect for busy parents and picky eaters.

Ingredients

Scale
  • 2 large egg whites, at room temperature
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped pecans
  • 1/8 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Separate the eggs while they’re cold. Let the whites sit at room temperature for about 10 minutes.
  3. In a clean, dry bowl, whip the egg whites on medium speed until frothy and bubbly. Add the salt.
  4. Gradually add the sugar, one tablespoon at a time, while continuing to whip until thick, glossy, and stiff peaks form.
  5. Gently fold in the vanilla extract, then the chocolate chips and chopped pecans.
  6. Drop spoonfuls onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
  7. Place the baking sheet in the oven, then immediately turn the oven OFF. Close the oven door and let the cookies sit inside for at least 2 hours, or overnight. Do not open the oven during this time.
  8. Remove the cookies after they have cooled completely in the oven. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack. Store in an airtight container.

Notes

Make sure your bowl and whisk are completely clean and dry. Any trace of grease or yolk will prevent the egg whites from whipping up properly. If your kitchen is humid, the cookies might take a bit longer to set. You can leave them in the oven for up to 12 hours for an even crisper texture.
