This creamy, kid-friendly white chicken chili is made in the slow cooker with simple ingredients like chicken, beans, corn, and cream cheese. It’s a weeknight lifesaver that picky eaters love, and it practically makes itself.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts (or chicken thighs)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 2 cans (15 oz each) cannellini beans or great northern beans, drained and rinsed
  • 1 can (15 oz) sweet corn, drained (or frozen corn)
  • 1 can (4 oz) diced green chiles, mild
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 8 oz cream cheese, softened and cut into cubes
  • 1/2 cup heavy cream or whole milk
  • Juice of 1 lime (about 2 tablespoons)
  • Shredded Monterey Jack or cheddar cheese (for topping, optional)
  • Fresh cilantro, chopped (for topping, optional)
  • Tortilla chips or strips (for topping, optional)
  • Sliced avocado (for topping, optional)
  • Sour cream or Greek yogurt (for topping, optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 4-5 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  2. Place chicken breasts in the bottom of a 6-quart or larger slow cooker. Spoon sautรฉed onion and garlic over the chicken. Add drained beans, corn, and diced green chiles. Sprinkle cumin, oregano, onion powder, salt, and pepper over everything. Pour chicken broth over the top. Do not stir.
  3. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until chicken is tender and easily shreds with a fork.
  4. Remove chicken from slow cooker and shred with two forks. Return shredded chicken to the slow cooker and stir gently.
  5. Turn off slow cooker or set to WARM. Add softened cream cheese cubes and heavy cream (or milk). Stir continuously until cream cheese is completely melted and chili is thick and velvety, about 5-7 minutes.
  6. Stir in lime juice. Taste and adjust salt and pepper if needed. Ladle into bowls and serve with desired toppings.

Notes

For best texture, add cream cheese at the end off the heat to prevent graininess. Sautรฉing aromatics first adds depth of flavor. Leftovers keep in the fridge for up to 5 days and freeze for up to 3 months. For a dairy-free version, use dairy-free cream cheese and unsweetened oat milk or coconut milk.
