A lighter version of classic popcorn bark, combining crunchy popcorn, chewy candy corn, and creamy white chocolate for a sweet-and-salty Halloween treat that comes together in under 15 minutes.

  • 2 tablespoons coconut oil (optional, for popping)

  • 1 1/2 cups white chocolate chips

  • 1 cup candy corn (regular or autumn mix)
  • Optional: 1/4 cup roasted salted peanuts
  • Optional: 2 tablespoons festive sprinkles

Instructions

  1. Pop the popcorn. If using stovetop method, heat 2 tablespoons coconut oil in a large pot over medium-high heat. Add 3 popcorn kernels and wait for them to pop. Once they do, add the remaining kernels (about 1/3 cup), cover, and shake the pot occasionally until popping slows to 2-3 seconds between pops. Remove from heat and let sit for 1 minute. (You should have about 8 cups of popped popcorn.)
  2. Prepare your workspace. Line a large baking sheet with parchment paper or a silicone mat. Spread the popped popcorn in a single layer on the sheet, removing any unpopped kernels you spot. Sprinkle the salt evenly over the warm popcorn and toss gently.
  3. Melt the white chocolate. In a microwave-safe bowl, combine the white chocolate chips and 1 tablespoon coconut oil. Microwave in 30-second intervals, stirring well after each, until smooth and fully melted. This usually takes about 1-2 minutes total. Be careful not to overheatโ€”white chocolate burns easily and turns grainy. (If using stovetop, melt over low heat in a double boiler, stirring constantly.)
  4. Pour and toss. Drizzle the melted white chocolate over the popcorn in an even stream. Using a spatula, gently fold and toss until every kernel has a light coating. Don’t overmixโ€”you want the chocolate to coat, not clump.
  5. Add the candy corn. Sprinkle the candy corn evenly over the chocolate-coated popcorn. Gently press a few pieces into the surface so they stick. If using peanuts or sprinkles, add them now too. Work quickly while the chocolate is still warm and tacky.
  6. Spread and set. Using your spatula, spread the mixture into an even layer about 1/2 inch thick. Don’t press too hardโ€”you want some texture and air pockets. Let the bark sit at room temperature for about 30-45 minutes, or until the chocolate is fully set. (You can speed this up by placing it in the refrigerator for 15 minutes, but watch it closely so the chocolate doesn’t bloom.)
  7. Break into pieces. Once set, lift the parchment paper off the baking sheet. Break the bark into irregular pieces with your handsโ€”this gives it that rustic, homemade look. Aim for pieces about 2-3 inches across.

Use room temperature candy corn to prevent chocolate from seizing. Work in a cool, dry environment for best results. Freshly popped popcorn is essential for texture; avoid microwave popcorn with artificial butter flavor. For dairy-free, use dairy-free white chocolate chips and coconut oil.
