  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 9-inch pie dish with butter or cooking spray.
  2. Toss chopped broccoli florets with 1/2 tablespoon olive oil and a pinch of salt. Spread in a single layer on a baking sheet. Roast for 10-12 minutes until bright green and tender.
  3. While broccoli roasts, heat remaining 1/2 tablespoon olive oil in a small skillet over medium heat. Add diced onion and cook 3-4 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant. Set aside to cool slightly.
  4. In a blender or food processor, blend cottage cheese for about 30 seconds until completely smooth and creamy.
  5. In a large mixing bowl, whisk eggs vigorously for 1 minute until frothy. Add blended cottage cheese and whisk until fully incorporated.
  6. Add roasted broccoli, sautéed onion and garlic, 1 cup shredded cheddar cheese (reserve 1/2 cup for topping), salt, pepper, and red pepper flakes (if using) to the egg mixture. Stir gently with a spatula until evenly distributed.
  7. Pour mixture into prepared pie dish. Spread into an even layer. Sprinkle remaining 1/2 cup shredded cheddar cheese evenly over the top.
  8. Bake for 25-30 minutes until center is just set (jiggles slightly but not liquid) and top is golden brown and puffed. A knife inserted into the center should come out clean.
  9. Let quiche rest in the dish for at least 10 minutes before slicing. Serve warm, at room temperature, or cold.
