Instructions

  1. Preheat oven to 350°F. Line a small baking sheet with parchment paper or foil.
  2. Place peeled and cubed sweet potatoes in a large pot, cover with cold water by about an inch, and add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook for 12-15 minutes until fork-tender.
  3. While potatoes boil, make the pecan crumble: In a small bowl, combine chopped pecans, melted butter, brown sugar, salt, and cayenne (if using). Stir until coated. Spread in a single layer on the prepared baking sheet. Bake for 8-10 minutes, stirring halfway through, until glossy and fragrant. Let cool on the baking sheet.
  4. In a medium skillet, melt 6 tablespoons butter over medium heat. Swirl occasionally. The butter will foam, then the foam will subside, and brown specks will form at the bottom. When it smells nutty and the specks are golden brown (about 4-5 minutes), remove from heat immediately.
  5. Drop fresh sage leaves into the hot browned butter. They will sizzle and crisp in about 30 seconds. Transfer to a paper towel-lined plate to cool.
  6. Drain the sweet potatoes in a colander and let them steam for 1-2 minutes to remove excess moisture.
  7. Return drained sweet potatoes to the pot. Add warm heavy cream, salt, and pepper. Pour in the browned butter, reserving about 1 tablespoon for drizzling. Mash to desired consistency (use a potato masher for texture or a hand mixer on low for smooth).
  8. Taste and adjust seasoning. If needed, stir in maple syrup for extra sweetness.
  9. Transfer mashed sweet potatoes to a serving dish. Sprinkle pecan crumble evenly on top. Crumble crispy sage leaves over everything. Drizzle with reserved browned butter. Serve immediately.

Notes

Use orange-fleshed sweet potatoes (often labeled as yams) for best creaminess. Fresh sage is non-negotiable for frying. For dairy-free, use vegan butter and coconut cream. The pecan crumble can be made in a dry skillet on the stovetop if needed. Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat gently. Freeze mashed potatoes (without crumble) for up to 3 months.
