Perfect Brown Sugar Apple Cake with Vanilla Glaze

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon

  • 1/4 teaspoon ground cloves
  • 3/4 cup unsalted butter, softened to room temperature
  • 1 1/2 cups packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk, room temperature
  • 2 cups peeled and chopped apples (about 2 medium apples, Honeycrisp or Granny Smith recommended)
  • 1 1/2 cups powdered sugar, sifted
  • 3 tablespoons whole milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan thoroughly with butter or cooking spray, then line the bottom with a circle of parchment paper. Lightly flour the sides of the pan and tap out any excess.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Whisk for about 20 seconds to aerate and distribute evenly. Set aside.
  3. In a large bowl (or the bowl of a stand mixer), beat the softened butter and brown sugar together on medium-high speed until light and fluffy, about 4-5 minutes. Scrape down the sides and bottom of the bowl at least once.
  4. Add the eggs one at a time, beating well after each addition (about 30 seconds each). Scrape the bowl again. Add the vanilla extract and beat until combined.
  5. With the mixer on low speed, add about one-third of the dry ingredients and mix until just combined. Add half the buttermilk and mix until incorporated. Repeat with another third of the dry ingredients, the remaining buttermilk, and finally the last of the dry ingredients. Stop mixing as soon as the flour disappears.
  6. Using a rubber spatula, gently fold the chopped apples into the batter until evenly distributed, about 8-10 folds. Do not overmix.
  7. Scrape the batter into the prepared pan and spread it evenly. Give the pan a gentle tap on the counter to release air bubbles. Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs. If the top is browning too quickly (around the 35-minute mark), tent loosely with aluminum foil.
  8. Let the cake cool in the pan on a wire rack for 15 minutes. Then run a knife around the edges, invert onto the rack, remove the parchment paper, and let it cool completely—at least 1 hour.
  9. While the cake is cooling, make the vanilla glaze. In a small bowl, whisk together the sifted powdered sugar, milk, vanilla extract, and a pinch of salt. Whisk until smooth and pourable. If too thick, add milk one teaspoon at a time; if too thin, add a tablespoon more powdered sugar.
  10. Once the cake is completely cool, place it on a serving plate. Drizzle the glaze over the top, letting it cascade down the sides naturally. Let the glaze set for about 15 minutes before slicing.

Notes

For best results, cream the butter and sugar for a full 5 minutes. Use room temperature eggs and buttermilk to prevent the batter from curdling. The cake tastes even better the day after baking—make it a day ahead, store unfrosted, and glaze just before serving. For a dairy-free version, use vegan butter and substitute buttermilk with almond milk mixed with apple cider vinegar. For gluten-free, use a 1:1 gluten-free baking blend.
