  • 4 ounces salami, such as Genoa or soppressata, sliced
  • 3 ounces chorizo or Spanish-style dry sausage, sliced
  • 2 ounces coppa or bresaola (optional)
  • 4 ounces brie or camembert, at room temperature
  • 3 ounces aged cheddar or gouda, sliced
  • 3 ounces goat cheese or blue cheese (optional)
  • 1/4 cup fig jam or honey
  • 1/4 cup mixed olives, such as kalamata and Castelvetrano
  • 1/4 cup Marcona almonds or roasted salted almonds
  • 1 small apple or pear, thinly sliced
  • 1/4 cup dried apricots or dates
  • 1 small baguette, sliced and toasted, or a handful of crackers
  • Fresh rosemary or thyme sprigs for garnish (optional)

Instructions

  1. Prep the cheeses (5 minutes): Remove cheeses from refrigerator about 30 minutes before serving. Unwrap and place on a plate to come to room temperature. If using a whole wheel of brie, leave it intact. For hard cheeses like cheddar, slice into thin wedges or cubes. For goat cheese, leave it whole or crumble it loosely.
  2. Slice the meats (3 minutes): Lay out prosciutto slices and gently separate them. Fold each slice into loose ribbons or leave them flat. Slice salami into thin rounds, about 1/8-inch thick. If using chorizo, cut it into thin slices. Arrange meats in small piles or overlapping rows on your board.
  3. Prepare the accompaniments (5 minutes): Slice baguette into 1/2-inch thick rounds. Toast lightly in a 350°F oven for 5 minutes if desired. Slice apple or pear thinly; toss in lemon juice to prevent browning if making ahead. Rinse and dry olives if in brine. Place fig jam in a small bowl and almonds in another.
  4. Arrange the board (5 minutes): Place small bowls on the board (fig jam in center, olives off to one side). Place cheeses at opposite ends for visual balance. Add meats in clusters around cheeses. Fill gaps with baguette slices, apple slices, dried apricots, and almonds. Create visual variety with different heights, colors, and textures.
  5. Garnish and serve (2 minutes): Tuck fresh rosemary or thyme sprigs around the board for color. If desired, add edible flowers or a pinch of flaky sea salt over cheeses. Serve immediately with small plates and napkins.

Notes

Bring cheeses to room temperature 30 minutes before serving for best texture. Slice meats just before serving to prevent drying. Don’t overcrowd the board; leave space between items. Let guests build their own combinations. For make-ahead, prep components up to 24 hours in advance and assemble 20 minutes before serving.
