Rich, deeply chocolatey pumpkin muffins with a hint of espresso that deepens the chocolate flavor. Moist, tender, and perfect for fall mornings or any time you need a comforting treat.

  • 1 ¾ cups all-purpose flour (220g)
  • ½ cup unsweetened cocoa powder (50g)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon espresso powder
  • 1 teaspoon ground cinnamon (optional)
  • 1 cup granulated sugar (200g)
  • ½ cup packed light brown sugar (100g)
  • 2 large eggs, at room temperature
  • ½ cup vegetable oil (120ml)
  • 1 cup pumpkin purée (240g)
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips (175g)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, espresso powder, and cinnamon for about 30 seconds. Set aside.
  3. In another large bowl, whisk together granulated sugar, brown sugar, eggs, and vegetable oil until smooth and slightly thickened, about 1 minute. Add pumpkin purée and vanilla extract; whisk until well combined.
  4. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just a few streaks of flour remain. Do not overmix.
  5. Fold in chocolate chips, reserving about ¼ cup for topping. Gently fold until evenly distributed.
  6. Divide batter evenly among muffin cups, filling each about ¾ full. Sprinkle reserved chocolate chips on top.
  7. Bake for 18 to 22 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. Rotate pan halfway through if needed.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.

Notes

For best results, use room temperature eggs and do not overmix the batter. Espresso powder deepens the chocolate flavor without making muffins taste like coffee. If using fresh pumpkin purée, drain excess liquid. Muffins taste even better the day after baking.
