  • 23 tbsp heavy cream or milk
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, sliced
  • Optional: edible glitter or sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch sheet pan and line with parchment paper.
  2. Sift together flour, baking powder, and salt; set aside.
  3. Cream softened butter and granulated sugar with an electric mixer on medium speed for 4-5 minutes until light and fluffy.
  4. Add eggs one at a time, beating fully after each addition, then stir in vanilla extract.
  5. Alternate adding dry ingredients and milk, beginning and ending with dry ingredients. Mix gently on low speed until just combined.
  6. Pour batter evenly into prepared pan and smooth the top. Tap pan lightly to release air bubbles.
  7. Bake for 35-40 minutes, checking with a toothpick for doneness. Tent with foil if edges brown too quickly.
  8. Cool cake completely on a wire rack, about 1 hour.
  9. Make cream cheese frosting by beating cream cheese and butter until smooth, then gradually add powdered sugar, vanilla, and cream until fluffy.
  10. Frost the cooled cake evenly using an offset spatula.
