Perfect Grilled Peach and Prosciutto Flatbread with Honey Ricotta

A quick and easy flatbread recipe combining grilled peaches, salty prosciutto, and creamy honey ricotta for a sweet-savory, crowd-pleasing dish perfect for any season.

  • Store-bought flatbread or naan (preferably Stonefire)
  • Olive oil, for brushing (extra virgin recommended)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup whole milk ricotta cheese (about 240 ml)
  • 2 tablespoons raw honey
  • Zest of half a lemon
  • Pinch of salt
  • 2 medium fresh peaches, ripe but firm (or nectarines or grilled canned peaches as substitutes)
  • 46 thin slices prosciutto
  • A handful of fresh basil leaves, torn
  • Drizzle of honey, to finish
  • Optional: crushed red pepper flakes

Instructions

  1. Prepare the honey ricotta: In a medium bowl, combine 1 cup (240 ml) whole milk ricotta cheese with 2 tablespoons (30 ml) raw honey, a pinch of salt, and the zest of half a lemon. Stir gently until smooth and creamy. Set aside.
  2. Slice the peaches into 1/4-inch (about 0.6 cm) thick slices, removing the pit carefully.
  3. Preheat your grill or grill pan over medium-high heat for about 5 minutes. Brush the grill grates or pan lightly with olive oil to prevent sticking.
  4. Grill the peach slices for 2-3 minutes per side until grill marks appear and the fruit softens slightly. Remove from heat and set aside.
  5. Brush both sides of the flatbread lightly with olive oil and season with sea salt and pepper. Grill each side for 1-2 minutes until warm and slightly crisp with grill marks.
  6. Spread a generous layer of honey ricotta over the warm flatbread. Arrange grilled peach slices evenly on top, then layer prosciutto slices over the peaches. Tuck torn basil leaves between slices.
  7. Drizzle a little more honey over the assembled flatbread. Optionally, sprinkle crushed red pepper flakes for heat. Slice and serve immediately while warm.

Notes

If ricotta is too thick, whisk with a tablespoon of milk to spread easier. Watch grill heat carefully to avoid burning flatbread. Use firm but ripe peaches for best grilling results. For dairy-free, substitute ricotta with coconut-based spread. For gluten-free, use gluten-free flatbread or almond flour crust.
