  • 4 tablespoons (57g) unsalted butter, softened
  • Pinch of sea salt or kosher salt
  • Freshly ground black pepper (optional)
  • Lemon wedges (optional)

Instructions

  1. Carefully peel back the husks without detaching them completely, then remove the silky threads. Snap off any excess stalk. Rinse the ears under cold water to clean away any lingering silk.
  2. Fill a large pot with about 2 inches (5 cm) of water. Place a steamer basket or heatproof colander inside, making sure the water doesn’t touch the corn. Bring to a rolling boil over high heat (5-7 minutes).
  3. Arrange the corn ears in the basket, cover the pot with a tight-fitting lid, and steam for 7-10 minutes until kernels are tender but still have a slight snap.
  4. While the corn is steaming, soften the butter in a small bowl. Mix in a pinch of sea salt and black pepper if using. Let it sit at room temperature until spreadable but not melted.
  5. Using tongs, transfer each ear of corn to a plate. Immediately slather with the salted butter so it melts into every crevice. If desired, squeeze a lemon wedge over the top.
  6. Serve immediately while hot and juicy.

Notes

Do not overcook the corn to avoid mushy kernels. Softening butter before spreading prevents tearing the corn. For extra flavor, grill corn briefly after steaming to add smoky char marks. Adjust salt lightly to enhance natural sweetness without overpowering.
