  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ¾ cup unsalted butter, cold and cut into small cubes
  • ¼ teaspoon salt
  • ¾ cup pure maple syrup
  • ½ cup packed brown sugar
  • 2 large eggs, room temperature
  • ¼ cup unsalted butter, melted
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups pecan halves

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on two opposite sides.
  2. In a food processor, combine flour, powdered sugar, and salt. Pulse to mix. Add cold butter cubes and pulse until mixture resembles coarse sand with some pea-sized butter pieces. Press evenly into the bottom of the prepared pan. Bake for 15-18 minutes until edges are just golden. Set aside to cool slightly.
  3. In a medium saucepan over medium heat, combine maple syrup, brown sugar, and melted butter. Whisk constantly until sugar dissolves and mixture is smooth, about 2-3 minutes. Remove from heat and let cool for 5 minutes.
  4. In a small bowl, whisk eggs, bourbon, vanilla, and salt together. Slowly pour egg mixture into maple mixture, whisking constantly until smooth and glossy.
  5. Spread pecan halves evenly over pre-baked crust. Pour filling over pecans, spreading evenly. Gently nudge any submerged pecans to the surface if desired.
  6. Bake at 350°F (175°C) for 25-30 minutes, until filling is set around edges but still slightly jiggly in center. If edges brown too quickly, tent with foil for last 10 minutes.
  7. Cool completely in pan on a wire rack (about 2 hours). Use parchment overhang to lift bars out. Slice into squares with a sharp knife, wiping clean between cuts.
  8. Serve at room temperature or slightly warm. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.

Notes

For best results, use room temperature eggs. If your kitchen is warm, chill the pressed crust for 15 minutes before baking. Do not overbake the filling; it will continue to set as it cools. For clean slices, cool completely and wipe knife between cuts. Bars can be frozen for up to 3 months.
