  • 12 fresh jalapeño peppers (about 34 inches long)
  • 8 ounces cream cheese, softened to room temperature
  • 4 ounces smoked gouda cheese, shredded
  • 12 slices thin-cut bacon
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika (optional)
  • ¼ teaspoon freshly ground black pepper
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C). Place a wire rack on a baking sheet and set aside.
  2. Wearing gloves, slice each jalapeño in half lengthwise. Use a small spoon to scrape out seeds and white membranes. Set hollowed halves aside.
  3. In a small bowl, combine softened cream cheese, shredded smoked gouda, garlic powder, onion powder, smoked paprika, black pepper, and a pinch of salt. Mix until evenly combined.
  4. Fill each jalapeño half with the cheese mixture using a small spoon or piping bag. Do not overstuff.
  5. Cut each bacon slice in half crosswise. Wrap one half-slice around each filled jalapeño half, overlapping ends slightly. Place seam-side down on the wire rack. Use toothpicks to secure if needed.
  6. Bake for 18-22 minutes, until bacon is crispy and cheese is bubbly. If bacon isn’t crispy enough after 22 minutes, broil for 1-2 minutes, watching carefully.
  7. Let poppers rest on the rack for 5 minutes before serving.

Notes

For best results, use thin-cut bacon and room temperature cream cheese. The wire rack is essential for crispy bacon. Wear gloves when handling jalapeños to avoid burning your hands. For less heat, remove all seeds and membranes; for more heat, leave some seeds in. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in an air fryer at 350°F for 3-4 minutes or in a 375°F oven on a wire rack for 5-7 minutes. Unbaked poppers can be frozen for up to 2 months.
