  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 1 cup (240ml) buttermilk, room temperature
  • 2 teaspoons vanilla extract
  • ½ cup (120ml) blueberry puree concentrate
  • 2 cups (300g) fresh or frozen blueberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 ½ cups (340g) unsalted butter, softened
  • 5 cups (600g) powdered sugar, sifted
  • ¼ cup (60ml) heavy cream
  • 2 teaspoons vanilla extract
  • Pinch of salt
  • Blue food coloring gel
  • 23 tablespoons reserved blueberry puree concentrate

Instructions

  1. Make the blueberry puree concentrate: Combine blueberries, 2 tablespoons sugar, and lemon juice in a small saucepan. Cook over medium heat, stirring occasionally, until berries burst and release juice (8-10 minutes). Reduce heat to low and simmer for another 10 minutes until thickened and reduced by half. Strain through a fine-mesh sieve, discarding seeds and skins. Let cool completely. Use ½ cup for batter and reserve 2-3 tablespoons for frosting.
  2. Preheat oven to 350°F (175°C). Grease three 8-inch round cake pans, line bottoms with parchment paper, and lightly flour sides.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt for 30 seconds.
  4. In a stand mixer with paddle attachment, beat butter and granulated sugar on medium speed until light and fluffy (4-5 minutes). Scrape bowl.
  5. Add eggs one at a time, beating well after each addition. Add vanilla extract and beat until combined. Scrape bowl.
  6. With mixer on low, add dry ingredients in three additions, alternating with buttermilk in two additions, starting and ending with dry ingredients. Mix just until combined. Fold batter gently with a spatula.
  7. Fold in ½ cup cooled blueberry puree concentrate until evenly distributed.
  8. Divide batter evenly among prepared pans (about 1 ½ cups or 380g per pan). Bake for 22-26 minutes, rotating pans halfway. Cool in pans for 10 minutes, then turn out onto wire rack to cool completely.
  9. Make buttercream: Beat softened butter on medium speed until smooth and creamy (2 minutes). Gradually add sifted powdered sugar, then heavy cream, vanilla, and salt. Beat on medium-high for 4-5 minutes until light and fluffy.
  10. Divide buttercream into three bowls: 2 cups (darkest), 1 ½ cups (medium), 1 cup (lightest). For darkest: add 2-3 tablespoons reserved blueberry puree and a dab of royal blue gel. For medium: add a few drops sky blue gel. For lightest: add 1-2 drops sky blue gel.
  11. Assemble cake: Place one layer on serving plate, spread medium-blue buttercream on top. Repeat with second layer and more medium-blue buttercream. Top with third layer. Apply thin crumb coat with lightest buttercream. Refrigerate 20 minutes.
  12. Apply ombre frosting: Starting at bottom, use offset spatula to apply darkest buttercream, blending into medium shade as you go up, then finish top with lightest shade. Smooth sides with bench scraper.

Notes

Temperature is everything: set ingredients out 2 hours before starting. The puree concentrate can be made ahead and stored in the fridge. Don’t skip the crumb coat for a smooth finish. Use a piping bag for precision when applying ombre frosting. If frosting is too stiff, add cream 1 teaspoon at a time; if too soft, add more powdered sugar 2 tablespoons at a time.
