  • 2 tablespoons natural, unsweetened peanut butter
  • 1 medium ripe banana, mashed
  • ½ cup milk of choice (120ml) – dairy or plant-based
  • ¼ cup Greek yogurt (60g), plain or vanilla
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon honey or maple syrup (optional)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Peel and mash 1 medium ripe banana in a small bowl or directly in the mason jar with a fork until smooth but still slightly chunky (about 2 minutes).
  2. Add 2 tablespoons of natural peanut butter and ¼ cup of Greek yogurt. Stir well to combine with the mashed banana for a creamy base (1-2 minutes).
  3. Add ½ cup rolled oats, 1 tablespoon chia seeds (if using), and a pinch of salt directly into the jar. Stir gently to distribute evenly (1 minute).
  4. Pour in ½ cup milk of your choice, 1 teaspoon honey or maple syrup (optional), and ½ teaspoon vanilla extract. Stir again until everything is well combined (1 minute).
  5. Seal the jar tightly and refrigerate overnight or for at least 4 hours to allow oats to absorb the liquid and soften.
  6. In the morning, stir the oats well. If too thick, add a splash of milk to loosen. Top with sliced banana, chopped nuts, or a drizzle of peanut butter if desired. Enjoy cold or warmed for 20-30 seconds in the microwave.

Notes

Use ripe bananas for natural sweetness and creaminess. Natural peanut butter without added oils or sugars is best. Chia seeds help thicken the oats but are optional. Adjust milk amount for preferred texture. Do not overfill the jar to allow oats to expand. Instant oats will be too mushy; steel-cut oats won’t soften enough overnight. Can be warmed briefly before serving. Store leftovers in the fridge up to 3 days.
