  • 1 medium yellow onion, finely diced
  • 4 garlic cloves, minced
  • 1 pound (450g) ground beef (80/20 blend)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ยผ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 can (28 ounces / 800g) crushed tomatoes
  • 4 cups (950ml) chicken or beef broth (low-sodium)
  • 8 to 10 lasagna noodles, broken into 2-inch pieces
  • ยฝ cup (120ml) heavy cream
  • 3 cups (90g) fresh spinach, roughly chopped (optional)
  • 1 cup (250g) whole milk ricotta cheese
  • Fresh parsley or basil for garnish
  • ยฝ cup (60g) shredded mozzarella cheese (optional)

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the diced onion and cook for 3 to 4 minutes, stirring occasionally, until translucent.
  2. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the ground beef and break it up with a wooden spoon. Cook for 5 to 7 minutes until browned. Spoon off excess fat, leaving about 1 tablespoon.
  4. Season the meat with dried oregano, dried basil, red pepper flakes, salt, and black pepper. Stir and cook for 1 minute.
  5. Pour in the crushed tomatoes and broth. Stir, scraping up any browned bits from the bottom. Bring to a boil over high heat.
  6. Add the broken lasagna noodles, stirring to submerge. Reduce heat to medium-low and simmer for 10 to 12 minutes, stirring occasionally, until noodles are tender.
  7. While noodles cook, prepare ricotta dollops: in a small bowl, combine ricotta with a pinch of salt and black pepper. Stir gently.
  8. Once noodles are tender, reduce heat to low. Stir in heavy cream and chopped spinach (if using). Cook for 1 to 2 minutes until spinach wilts. Adjust seasoning.
  9. Serve immediately by ladling soup into bowls. Top each with a generous dollop of seasoned ricotta. Garnish with fresh parsley or basil and shredded mozzarella if desired.

Notes

The soup thickens as it sits because noodles absorb liquid. For leftovers, cook noodles separately and add when serving. For best results, don’t stir ricotta into the pot; dollop on top for creamy contrast.
