  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped cilantro (optional)
  • For serving: tortillas, rice, or salad greens

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil.
  2. In a large mixing bowl, combine the ground turkey, breadcrumbs, beaten egg, salsa, taco seasoning, chopped onion, minced garlic, salt, and pepper. Add the cilantro if using. Use your hands to gently mix until evenly distributed, about 30 seconds.
  3. Form the mixture into 1.5-inch meatballs. You should get about 18-20 meatballs. Wet your hands slightly with cold water to prevent sticking.
  4. Place the meatballs on the prepared baking sheet, spacing them about 1 inch apart.
  5. Bake for 15-18 minutes, or until the internal temperature reaches 165°F (74°C). The meatballs should be golden brown and firm to the touch.
  6. Let the meatballs rest on the baking sheet for 2-3 minutes before serving.
  7. Serve immediately or let cool completely for freezing. To freeze, spread cooled meatballs on a parchment-lined baking sheet and freeze for 1 hour, then transfer to a freezer-safe bag or container. They’ll keep for up to 3 months.

Notes

For best texture, use 93/7 lean ground turkey. The salsa is key for moisture—don’t skip it. If the mixture seems too wet, add another tablespoon of breadcrumbs; if too dry, add another tablespoon of salsa. You can assemble the mixture up to 24 hours in advance and refrigerate. For pan-frying, cook in a skillet with oil over medium heat for 10-12 minutes. For air fryer, cook at 375°F (190°C) for 10-12 minutes.
