  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Juice of half a lemon
  • 2 tablespoons fresh parsley, chopped
  • 4 medium zucchini, spiralized into noodles (about 4 cups)
  • 1 tablespoon olive oil
  • Pinch of salt

Instructions

  1. Wash and dry the zucchini thoroughly. Using a spiralizer or julienne peeler, create long, thin noodles. Place the noodles in a colander, sprinkle with a pinch of salt, and let them sit for 10 minutes to draw out excess moisture. Pat dry gently with paper towels.
  2. If frozen, thaw shrimp under cold running water and pat dry. Season lightly with salt and pepper.
  3. Heat 2 tablespoons of butter in a large skillet over medium heat. Once melted and sizzling, add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant, being careful not to brown the garlic.
  4. Add the shrimp in a single layer, cooking 2-3 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
  5. In the same skillet, add olive oil and the remaining 1 tablespoon of butter. Toss in the zucchini noodles, cooking for 2-3 minutes on medium-high heat. Stir gently to warm and soften the noodles without making them mushy.
  6. Return the shrimp to the skillet with the zucchini noodles. Squeeze lemon juice over the top and sprinkle with chopped parsley. Toss gently for another 30 seconds to meld flavors. Taste and adjust seasoning with salt and pepper if needed.
  7. Serve immediately while warm for the best texture and flavor.

Notes

Do not overcook the shrimp to avoid rubbery texture. Pat zucchini noodles dry after salting to prevent sogginess. Use room temperature shrimp for even cooking. Stir garlic constantly to prevent burning. Cook shrimp in batches if needed to avoid steaming. Spiralize zucchini just before cooking for best texture.
