  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides.
  2. In your large mixing bowl, combine the wet ingredients: 1 cup pumpkin puree, 1 cup granulated sugar, 1/2 cup packed brown sugar, 1/2 cup vegetable oil, 2 large eggs, and 1 teaspoon vanilla extract. Whisk or stir until smooth.
  3. Add the dry ingredients right on top: 1 3/4 cups all-purpose flour, 1 teaspoon baking soda, 1 1/2 teaspoons cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon ginger, and 1/2 teaspoon salt. Stir gently until just combined.
  4. Fold in 1 cup semi-sweet chocolate chips. Reserve a handful to sprinkle on top if desired.
  5. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle reserved chocolate chips on top, pressing them in slightly.
  6. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after 40 minutes.
  7. Cool in the pan for 10 minutes, then lift out using parchment and transfer to a cooling rack. Cool completely before slicing, about 1 hour.

Don’t overmix the batter. Use room temperature eggs. Measure flour correctly by spooning and leveling. Let the bread cool completely before slicing. Check baking soda freshness. The bread tastes even better the next day.
