Ingredients

Scale
  • 1 cup fresh or frozen blueberries
  • ½ cup granulated sugar (for syrup)
  • ½ cup water (for syrup)
  • 1 teaspoon fresh lemon juice (for syrup)
  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • ¾ cup granulated sugar (for lemonade)
  • 4 cups cold water (for lemonade)
  • Ice cubes, as needed
  • 1 cup chilled sparkling water or club soda
  • Optional garnishes: fresh blueberries, lemon slices or wedges, mint leaves

Instructions

  1. Make the Blueberry Syrup (15 minutes): Combine blueberries, sugar, and water in a medium saucepan over medium heat. Stir occasionally until sugar dissolves and mixture simmers. Simmer for 8-10 minutes, mashing blueberries to release juices.
  2. Remove from heat, strain syrup through a fine mesh sieve to remove skins and seeds. Stir in lemon juice and set aside to cool.
  3. Prepare the Lemonade Base (10 minutes): In a large pitcher, combine freshly squeezed lemon juice and granulated sugar. Stir vigorously until sugar dissolves. Add cold water and mix well. Adjust sweetness if needed.
  4. Chill the Components: Refrigerate the lemonade and blueberry syrup for at least 30 minutes until well chilled to keep layers distinct.
  5. Layer the Drink (5 minutes per glass): Fill a tall glass halfway with ice cubes. Pour chilled lemonade gently until glass is about two-thirds full. Slowly add sparkling water to fill almost to the top.
  6. Spoon cooled blueberry syrup over the back of a spoon held just above the drink’s surface to create the red layer at the bottom without mixing.
  7. Garnish and Serve: Add fresh blueberries, a lemon slice, and a sprig of mint if desired. Serve immediately for best visual effect and fizz.

Notes

Use chilled ingredients to keep layers separate. Pour blueberry syrup slowly over the back of a spoon to prevent mixing. Freshly squeezed lemon juice is preferred for best flavor. Syrup can be stored in the refrigerator up to 5 days. Reheat syrup gently if thickened. Clear glasses showcase the layers best.
