Refreshing Watermelon Lime Popsicles

A simple, refreshing summer treat made with just three ingredients: watermelon, fresh lime juice, and a touch of sweetener. Perfect for cooling off on hot days with a burst of sweet and tangy flavor.

  • 4 cups (600 grams) seedless watermelon chunks, peeled and diced
  • 1/4 cup (60 ml) fresh lime juice
  • 2 tablespoons (30 ml) honey or agave syrup (optional)
  • Pinch of salt (optional)

Instructions

  1. Prepare the watermelon by cutting about 4 cups (600 grams) of seedless watermelon into chunks, removing rind and seeds if using a whole melon.
  2. Roll 2-3 limes on the counter, cut in half, and squeeze out 1/4 cup (60 ml) of fresh lime juice. Strain if desired.
  3. Add watermelon chunks, fresh lime juice, and 2 tablespoons (30 ml) of honey or agave syrup into a blender. Blend on high until smooth, about 1-2 minutes.
  4. Taste and adjust sweetness or lime juice as needed.
  5. Pour the mixture into popsicle molds, leaving room at the top for expansion. Insert sticks if required.
  6. Freeze molds for at least 4-6 hours or overnight.
  7. To unmold, run warm water briefly over the outside of the molds and carefully remove the popsicles. Serve immediately or keep frozen.

Notes

Use ripe watermelon for best sweetness. Sweetener is optional depending on watermelon sweetness. Cover molds loosely while freezing to prevent odors. For extra texture, add small watermelon seeds or chopped mint before freezing. Variations include adding fresh herbs, chili powder, or coconut milk for creamier popsicles.
