  • 1/2 cup (50g) almond meal
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (28g) unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon almond extract (optional)
  • 2 cups (300g) fresh cherries, pitted and halved
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon fresh lemon juice
  • 1/2 cup (60g) powdered sugar
  • 12 tablespoons whole milk or cream (or dairy-free milk)
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Make the crust: In a large bowl, whisk together flour and salt. Add cold butter cubes and blend with a pastry cutter or fingers until mixture resembles coarse crumbs with some pea-sized pieces. Add 3 tablespoons ice water and mix gently until dough just comes together. Add more water if needed. Wrap in plastic and chill for at least 30 minutes.
  2. Prepare the almond filling: In a medium bowl, beat softened butter with sugar until creamy. Add egg and almond extract, mixing until smooth. Fold in almond meal and set aside.
  3. Prepare the cherry topping: Toss pitted, halved cherries with sugar, cornstarch, and lemon juice in another bowl.
  4. Roll out the crust: On a lightly floured surface, roll dough into a roughly 12-inch circle. Transfer to a parchment-lined baking sheet.
  5. Assemble the galette: Spread almond filling evenly over dough, leaving a 2-inch border. Spoon cherry mixture evenly on top.
  6. Fold the edges: Fold dough edges over cherries, pleating to create a rustic border. Brush crust edges with beaten egg or milk for a golden finish.
  7. Bake: Preheat oven to 375°F (190°C). Bake galette for 40-45 minutes until crust is golden and cherry filling is bubbly. Check after 35 minutes to prevent over-browning.
  8. Make the vanilla glaze: While galette cools slightly, whisk powdered sugar, milk or cream, and vanilla extract until smooth. Drizzle over warm galette.
  9. Serve: Let galette cool for 15 minutes before slicing. Serve warm or at room temperature.

Keep ingredients cold to ensure a flaky crust. Do not overmix dough to avoid toughness. Almond filling prevents soggy crust by acting as a moisture barrier. Check baking time closely starting at 35 minutes. Adjust glaze consistency by adding milk one teaspoon at a time. If cherries release too much juice, blot with paper towels before adding.
