  • 1 cup (about 120 g) shredded zucchini, squeezed dry
  • 3/4 cup (130 g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper or a silicone mat.
  2. Shred 1 cup of zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  3. In a medium bowl, whisk together 1 cup all-purpose flour, 1/2 teaspoon baking soda, 1/4 teaspoon baking powder, 1/4 teaspoon salt, and 1 teaspoon ground cinnamon. Set aside.
  4. In a large bowl, beat 1/2 cup softened unsalted butter, 1/2 cup brown sugar, and 1/4 cup granulated sugar together until light and fluffy.
  5. Beat in 1 large room temperature egg and 1 teaspoon vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing.
  7. Gently fold in the shredded zucchini, then fold in 3/4 cup semi-sweet chocolate chips.
  8. Using a tablespoon or cookie scoop, drop dough balls about 2 inches apart on the prepared baking sheet.
  9. Bake for 10-12 minutes, or until the edges turn golden and the centers look set but still soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.

Notes

Squeeze the zucchini well to avoid soggy cookies. Use room temperature ingredients for better mixing. Pull cookies out when centers are still soft to keep chewiness. You can substitute ingredients for gluten-free or vegan versions.
