A sophisticated Halloween punch with deep black color and dramatic dry ice fog. This grown-up drink combines blackberry juice, fresh lemon, and stout beer for a tart, refreshing flavor that’s perfect for fall gatherings.

  • 4 cups blackberry juice, chilled
  • 1 cup fresh lemon juice (about 6–8 lemons)
  • 1 cup simple syrup (1 cup water + 1 cup granulated sugar)
  • 1 (750ml) bottle stout beer, chilled
  • 2 cups cold water
  • Fresh blackberries and lemon slices for garnish
  • 1–2 pounds food-grade dry ice

Instructions

  1. Make the simple syrup: In a small saucepan, combine 1 cup water with 1 cup granulated sugar. Bring to a simmer over medium heat, stirring occasionally, until sugar is completely dissolved (about 3-4 minutes). Remove from heat and let cool completely.
  2. In a large punch bowl, combine chilled blackberry juice, fresh lemon juice, and cooled simple syrup. Stir well.
  3. Just before serving, gently pour in chilled stout beer and cold water. Stir gently to combine without losing carbonation.
  4. Add fresh blackberries and thin lemon slices as garnish.
  5. Wearing gloves or using tongs, carefully place a small chunk of dry ice (about golf ball size) into the punch bowl. Do not drop from height.
  6. Serve immediately using a ladle, being careful not to ladle up any dry ice pieces. Add another small chunk of dry ice when fog dissipates.

Notes

Handle dry ice with gloves or tongs only – never touch with bare skin. The dry ice is for visual effect only; do not consume. The punch is safe to drink once dry ice has fully sublimated. For best results, chill all ingredients for 2-3 hours before mixing. The punch base (without stout, water, and dry ice) can be made a day ahead and stored in the refrigerator.
