Spooky Spider Web Cookie Cake: Easy Halloween Dessert

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (150g) packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 2 cups (340g) semi-sweet chocolate chips
  • 1/2 cup (85g) white chocolate chips or melting wafers
  • 1 teaspoon coconut oil or vegetable shortening
  • Small candy spiders or black sprinkles (optional)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 9-inch round cake pan or springform pan and line the bottom with parchment paper.
  2. In a large bowl, beat softened butter, granulated sugar, and brown sugar on medium speed for 3-4 minutes until light and fluffy.
  3. Add eggs one at a time, beating well after each. Add vanilla and beat until smooth and glossy.
  4. In a medium bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing on low just until combined. Do not overmix.
  6. Fold in chocolate chips with a rubber spatula until evenly distributed.
  7. Press dough evenly into prepared pan, about 1/2 inch up the sides.
  8. Chill dough in refrigerator for 20 minutes (do not skip).
  9. Bake for 22-28 minutes until edges are golden and center is set but still soft. Cool in pan on wire rack for 15 minutes, then remove and cool completely.
  10. For the web: melt white chocolate chips and coconut oil in microwave in 30-second intervals, stirring until smooth. Transfer to a piping bag or zip-top bag and snip a tiny corner.
  11. Pipe concentric circles of white chocolate on cooled cookie, starting from center and working outward (5-6 circles).
  12. Using a toothpick, drag from center outward through all circles to create web effect. Wipe toothpick clean between each drag. Repeat 8-10 times around cookie.
  13. Place candy spiders or sprinkles on web while chocolate is still wet (optional).
  14. Let web set at room temperature for 30 minutes (or 15 minutes in refrigerator) before slicing.

Notes

Chilling the dough is essential to prevent spreading. For a softer center, bake on the shorter end. If white chocolate seizes, start over with fresh chocolate and use lower microwave power. Store leftovers in an airtight container at room temperature for up to 4 days; place a piece of bread in the container to keep the cookie soft.
