  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground
  • 1 tablespoon olive oil
  • 1 cup peach preserves or jam
  • ¼ cup bourbon (e.g., Maker’s Mark or Bulleit)
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon butter
  • Fresh sliced peaches (optional, for garnish)
  • Fresh thyme or basil leaves (optional, for garnish)
  • Green onions, sliced (optional, for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper. Let sit at room temperature for 10 minutes.
  2. In a small bowl, whisk together peach preserves, bourbon, apple cider vinegar, minced garlic, grated ginger, and soy sauce until smooth.
  3. Heat a large skillet or cast-iron pan over medium-high heat and add olive oil. Wait until the oil shimmers.
  4. Place chicken thighs skin-side down in the hot skillet. Cook undisturbed for 5-6 minutes until deep golden brown.
  5. Flip each thigh using tongs and cook for another 4-5 minutes on the other side.
  6. Pour the prepared glaze into the skillet around the chicken. Let it bubble and reduce for 2-3 minutes, spooning some glaze over the chicken.
  7. Reduce heat to medium-low and simmer for 5-7 minutes, spooning glaze over chicken every minute, until glaze is thick and sticky and chicken reaches 165°F internally.
  8. Remove chicken from skillet and let rest on a plate for 5 minutes. Stir butter into remaining glaze in the pan for extra richness.
  9. Spoon glaze over chicken before serving. Garnish with fresh sliced peaches, thyme or basil, and green onions if desired.

Notes

For extra caramelization, transfer glazed chicken to a baking sheet and broil for 2-3 minutes, watching carefully. Make extra glaze to drizzle over rice or vegetables. If glaze gets too thick, add a splash of water or chicken broth.
