  • 46 bone-in, skin-on chicken thighs (about 2 pounds)
  • 1/4 cup honey (85 grams)
  • 1/4 cup low sodium soy sauce (60 ml)
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar (15 ml)

Instructions

  1. Pat the chicken thighs dry with paper towels and trim excess fat, leaving the skin on.
  2. In a mixing bowl, whisk together honey, soy sauce, minced garlic, and apple cider vinegar until smooth.
  3. Place the chicken thighs skin-side down in the bottom of the crockpot.
  4. Pour the honey garlic sauce evenly over the chicken, coating each piece.
  5. Cover and cook on low for 4 to 6 hours until the chicken is tender and the sauce thickens slightly.
  6. Optional: For a crispy finish, place the cooked thighs on a foil-lined baking sheet and broil for 3-5 minutes, watching closely.
  7. Serve with extra sauce spooned over the chicken.

Notes

If sauce is too thin after cooking, mix 1 tablespoon cornstarch with 1 tablespoon cold water and stir into crockpot. Cook on high for 15-20 minutes until thickened. For gluten-free, substitute soy sauce with tamari or coconut aminos. Broiling at the end adds a caramelized crust but is optional.
