This perfectly balanced, sweet-and-fiery hot sauce combines ripe peaches with charred habaneros for a smoky, complex flavor. Quick and easy to make, it’s the perfect condiment for tacos, eggs, or anything that needs a kick.

Ingredients

Scale
  • 3 ripe but firm peaches, pitted and roughly chopped (about 2 cups)
  • 68 fresh habanero peppers, stems removed
  • 1 medium yellow onion, roughly chopped
  • 3 cloves garlic, peeled
  • 1/2 cup apple cider vinegar
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 1/2 teaspoon cumin (optional)
  • 1/4 cup water

Instructions

  1. Char the habaneros and onion: Heat a cast iron skillet over high heat until smoking hot. Place whole habaneros (stems removed) and roughly chopped onion in the dry skillet. Cook undisturbed for 2-3 minutes until bottoms are blackened and blistered. Flip and repeat on the other side.
  2. Toast the garlic: Push charred peppers and onion to one side of the skillet. Add peeled garlic cloves and toast for about 30 seconds per side until golden and fragrant.
  3. Simmer everything together: Transfer charred habaneros, onion, and garlic to a medium saucepan. Add chopped peaches, apple cider vinegar, lime juice, honey, salt, and cumin (if using). Pour in water. Bring to a boil over medium-high heat, then reduce heat to low and simmer uncovered for 15 minutes, stirring occasionally.
  4. Let it cool slightly: Remove saucepan from heat and let mixture cool for 5-10 minutes.
  5. Blend until smooth: Carefully transfer mixture to a blender. Start on low speed and gradually increase to high. Blend for 1-2 minutes until completely smooth. Add water one tablespoon at a time if needed to reach desired consistency.
  6. Taste and adjust: Adjust heat, sweetness, or tang to your preference by adding more habanero, honey, or lime juice.
  7. Strain (optional): For an ultra-smooth sauce, pour through a fine-mesh strainer, pressing on solids with a spatula.
  8. Bottle and store: Use a funnel to pour sauce into sterilized glass bottles or jars, leaving about half an inch of headspace. Cool completely before sealing and refrigerating.

Notes

Wear gloves when handling habaneros to avoid skin irritation. For a milder sauce, use 4-5 habaneros and remove all seeds and membranes. For extra heat, leave some seeds in. Let sauce sit in the fridge overnight for flavors to meld. Sauce keeps in refrigerator for up to 3 weeks, or freeze in ice cube trays for up to 3 months.
