  • 4 oz Genoa salami, sliced
  • 2 large Honeycrisp apples
  • 1/2 cup Dried figs
  • 1 cup Red seedless grapes
  • 1/4 cup Fig jam
  • 2 tbsp Honey
  • 1/2 cup Marcona almonds
  • 1/2 cup Walnuts, toasted
  • 1/4 cup Pumpkin seeds
  • 8 oz Crackers (4–5 varieties)
  • 1 small Baguette, sliced and toasted
  • 2–3 sprigs Fresh rosemary
  • A few sprigs Fresh thyme
  • Edible flowers (optional)

Instructions

  1. Prep the cheese: Take brie and goat cheese out of refrigerator 30 minutes before serving. Slice aged cheddar into thin triangles or cubes. Leave brie whole or cut in half. Roll goat cheese log in chopped herbs or crushed black pepper.
  2. Toast the nuts: In a dry skillet over medium heat, toast walnuts for 3-4 minutes until fragrant. Let cool completely.
  3. Slice the baguette: Cut baguette into 1/4 inch slices. Toast at 375°F for 5-7 minutes until golden and crisp.
  4. Prepare the Honeycrisp apples: Just before serving, slice apples into thin wedges (1/4 inch thick). Remove core and seeds. Toss with lemon juice to prevent browning if making ahead.
  5. Arrange the bowls: Place small bowls with fig jam, honey, and Marcona almonds on the board at different points for visual balance.
  6. Add the cheeses: Place brie wheel in a prominent spot, goat cheese log next to it, and arrange cheddar slices in a fan pattern nearby.
  7. Layer the meats: Fold prosciutto into loose ribbons near brie. Roll sopressata and Genoa salami into cylinders or fold into quarters. Group together but separate from cheese.
  8. Fill in with fruits: Scatter apple slices in clusters around the board. Add dried figs and grapes in small groups, filling gaps between cheese and meat.
  9. Add the crunch: Sprinkle toasted walnuts, pumpkin seeds, and remaining almonds in empty spaces in a thin, even layer.
  10. Finish with crackers and garnish: Arrange crackers and toasted baguette slices in small stacks or fans around edges. Tuck fresh rosemary and thyme sprigs between ingredients. Drizzle honey over goat cheese and a few apple slices just before serving.

Let cheeses sit at room temperature for at least 30 minutes before serving for best flavor. Slice Honeycrisp apples just before serving to prevent browning.
