This ultimate grilled BBQ bacon cheeseburger features a juicy patty made with chopped bacon mixed right into the ground beef, glazed with smoky-sweet barbecue sauce, and topped with melted cheddar cheese. It’s a quick and easy recipe perfect for summer grilling that delivers incredible smoky flavor in under 30 minutes.

  • 1 ½ pounds ground beef (80/20 blend)
  • 4 slices thick-cut bacon, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • ½ cup barbecue sauce (smoky-sweet variety)
  • 4 slices sharp cheddar cheese
  • 4 brioche burger buns, split and lightly toasted
  • 4 leaves green leaf lettuce
  • 4 slices ripe tomato
  • 4 rings red onion (optional)
  • Pickle slices (for serving)

Instructions

  1. Preheat your grill to medium-high heat (about 400-450°F or 200-230°C). Clean the grates well and oil them to prevent sticking.
  2. In a large bowl, combine the ground beef, chopped bacon, garlic powder, onion powder, smoked paprika, salt, pepper, and Worcestershire sauce. Gently mix with your hands until just combined, being careful not to overwork the meat.
  3. Divide the meat mixture into 4 equal portions. Shape each portion into a patty about ¾-inch thick. Make a small indentation in the center of each patty with your thumb. Place the patties on a plate and refrigerate for 15 minutes.
  4. Place the patties on the preheated grill. Cook for 4-5 minutes on the first side without moving them. Flip the patties and cook for another 3-4 minutes for medium-rare (internal temperature of 130-135°F or 54-57°C), or 4-5 minutes for medium (140-145°F or 60-63°C).
  5. During the last 2 minutes of cooking, brush the top of each patty generously with barbecue sauce. Flip the patties, glaze the other side, and cook for another minute.
  6. In the last minute of cooking, place a slice of cheddar cheese on each patty. Close the grill lid and let the cheese melt for about 60 seconds.
  7. While the cheese is melting, place the buns cut-side down on the cooler part of the grill. Toast for about 1-2 minutes, until lightly golden.
  8. Remove the patties and buns from the grill. On each bottom bun, place a lettuce leaf, a tomato slice, and a red onion ring (if using). Place the cheesy, glazed patty on top. Add a few pickle slices. Top with the other half of the bun. Let the burgers rest for 2-3 minutes before serving.

Notes

For best results, use 80/20 ground beef for juiciness. Don’t press down on the patties while cooking to keep them juicy. Let the burgers rest for 2-3 minutes after grilling to allow juices to redistribute. If patties stick to the grill, they aren’t ready to flip. For a gluten-free version, use gluten-free buns and check Worcestershire sauce and BBQ sauce labels.
