  • 3 cups cooked pulled pork
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • Salt and black pepper to taste
  • ¼ cup barbecue sauce
  • ¼ cup chicken broth
  • 1 large bag (1316 ounces) restaurant-style tortilla chips
  • 2 cups shredded Mexican blend cheese
  • 1 cup shredded pepper jack cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 medium tomato, diced
  • ½ cup red onion, finely diced
  • 12 jalapeños, sliced
  • ½ cup pickled jalapeños
  • 1 cup sour cream
  • 1 cup guacamole
  • ½ cup fresh cilantro, chopped
  • 2 limes, cut into wedges
  • Optional: sliced black olives, diced avocado, hot sauce

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil.
  2. Heat olive oil in a skillet over medium-high heat. Add pulled pork and break it up with a spatula. Sprinkle with smoked paprika, garlic powder, cumin, chili powder, salt, and pepper. Cook for 3-4 minutes until crispy edges form.
  3. Add barbecue sauce and chicken broth, reduce heat to low, and simmer for 2-3 minutes until sauce thickens and coats the meat.
  4. Spread half the tortilla chips in an even layer on the prepared baking sheet.
  5. Sprinkle half the Mexican blend cheese and half the pepper jack cheese over the chips. Scatter half the pulled pork, black beans, and corn over the cheese.
  6. Add remaining chips on top, then repeat with remaining cheese, pulled pork, black beans, and corn. Press down gently with a spatula.
  7. Bake for 8-10 minutes until cheese is melted and bubbly and chip edges are golden.
  8. Remove from oven and immediately sprinkle with diced tomato, red onion, fresh jalapeños, and pickled jalapeños.
  9. Dollop sour cream and guacamole over the top. Sprinkle with fresh cilantro and arrange lime wedges around the edges. Serve immediately.

Notes

For best results, add cold toppings after baking to keep them fresh. Use thick tortilla chips to hold up to heavy toppings. Shred cheese from a block for better melting. Work quickly when adding fresh toppings as nachos are best within 10 minutes of coming out of the oven.
