  • 2 cups (250g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • ½ cup (110g) brown sugar
  • ½ cup (120ml) vegetable oil (can substitute melted coconut oil)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups grated zucchini (about 2 medium zucchinis), packed but not squeezed dry
  • 1 cup (175g) semi-sweet or dark chocolate chips
  • Optional: ½ cup (60g) chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or non-stick spray.
  2. Grate zucchini using a box grater or food processor; do not squeeze out moisture. Set aside.
  3. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  4. In a separate bowl, whisk granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and slightly fluffy (about 2-3 minutes).
  5. Fold grated zucchini gently into the wet mixture.
  6. Gradually fold dry ingredients into the wet zucchini mixture until just combined; do not overmix.
  7. Fold in chocolate chips and walnuts (if using), reserving a small handful of chocolate chips for topping.
  8. Pour batter into prepared loaf pan and sprinkle reserved chocolate chips on top.
  9. Bake for 55-65 minutes, checking at 50 minutes with a toothpick; it should come out with a few moist crumbs but no raw batter.
  10. Cool bread in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to keep the bread tender. Keep zucchini moisture for softness. Use room temperature eggs for better mixing. Tent with foil if bread browns too quickly. High-quality chocolate chips improve melt and flavor. For gluten-free, substitute flour with a 1-to-1 gluten-free blend. For vegan, replace eggs with flax eggs and use dairy-free chocolate chips and coconut oil.
