Instructions

  1. Preheat your oven to 400°F (200°C). Pat chicken thighs dry with paper towels.
  2. In a mixing bowl, whisk together honey, Dijon mustard, whole grain mustard, olive oil, minced garlic, apple cider vinegar, salt, black pepper, paprika, and dried thyme until smooth. Taste and adjust sweetness or tanginess as desired.
  3. Arrange chicken thighs in a single layer in a 9×13-inch baking dish, skin-side up if using skin-on pieces. Leave space between each piece.
