Instructions

  1. Combine 1 cup creamy peanut butter and 1/3 cup honey in a mixing bowl. Stir until smooth and well blended, about 2 minutes.
  2. Add 1 1/2 cups rolled oats and mix thoroughly until oats are evenly coated and mixture thickens.
  3. Fold in 1/2 cup mini chocolate chips gently.
  4. Form the mixture into 1-inch diameter bite-sized balls using hands or a small cookie scoop, yielding about 20-24 bites.
  5. Place the bites on a baking sheet or plate lined with parchment and refrigerate for at least 30 minutes to firm up.
  6. Store the chilled bites in an airtight container in the refrigerator for up to one week or freeze for up to three months.

If peanut butter is thick or cold, warm it in the microwave for 15 seconds to ease mixing. Use lightly damp hands to roll bites to prevent sticking.
