These Easy Pumpkin Spice Witches’ Hat Cookies are festive, delicious, and surprisingly simple to put together. They look like you spent hours on them, but the whole process takes less than an hour from start to finish (plus chilling time).

  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup pumpkin puree (not pumpkin pie filling)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 24 chocolate wafer cookies
  • 24 chocolate kisses or mini chocolate cones
  • 1 cup semisweet chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening
  • Green or orange frosting (store-bought or homemade)
  • Candy corn or orange sprinkles

Instructions

  1. Make the pumpkin cookie dough. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffyโ€”about 3 minutes with an electric mixer. Add the egg, vanilla, and pumpkin puree, then mix until combined. In a separate bowl, whisk together the flour, baking soda, salt, pumpkin pie spice, and cinnamon. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  2. Chill the dough. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (or up to 3 days).
  3. Preheat and prepare. When ready to bake, preheat oven to 350ยฐF (175ยฐC). Line two baking sheets with parchment paper.
  4. Scoop and bake. Use a cookie scoop to portion out rounded tablespoons of dough (about 1.5 inches in diameter). Place on prepared baking sheets about 2 inches apart. Bake for 10-12 minutes, until edges are set and centers look slightly underdone. Let rest on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely. You should get about 24 cookies.
  5. Melt the chocolate. While cookies cool, place chocolate chips and coconut oil in a small microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until smooth and fully melted.
  6. Assemble the hats. Once cookies are completely cool, take a chocolate wafer cookie and spread a small amount of melted chocolate on the bottom of a chocolate kiss or cone. Press gently onto the center of the pumpkin cookie to form the hat’s peak. Hold for about 10 seconds until secure.
  7. Add the brim detail. Using a small spoon or piping bag, drizzle a thin ring of melted chocolate around the base of the kiss where it meets the cookie. Let set for about 10 minutes at room temperature, or refrigerate for 5 minutes.
  8. Decorate with frosting and buckle. Pipe a small dollop of green or orange frosting onto the front of the hat band. Press a candy corn piece (pointing sideways) or an orange sprinkle into the frosting to create the buckle. Let everything set completelyโ€”about 20 minutes at room temperature.

Notes

Chill the dough for at least 1 hour to prevent spreading. Make sure cookies are completely cool before assembling to prevent chocolate from sliding off. For quicker setting, refrigerate assembled cookies for 10 minutes. The flavors deepen after a day or two.
