Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Pat the pork tenderloin dry with paper towels and season generously on all sides with salt and pepper.
  2. Heat the olive oil in a large Dutch oven over medium-high heat until shimmering. Sear the pork for 3-4 minutes per side, including the ends, until a deep brown crust forms (about 8-10 minutes total). Transfer to a plate.
  3. Reduce heat to medium. Add the sliced onion to the pot and cook, scraping up browned bits, for about 5 minutes until soft and golden.
  4. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Pour in the apple cider and chicken broth. Add the thyme, rosemary, and bay leaf. Stir and bring to a simmer. Let bubble for 2 minutes.
