  • 1/2 cup cold water
  • 1 box (3 oz) lemon Jell-O
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 packet (0.25 oz) unflavored gelatin
  • 1/4 cup cold water
  • 1 can (12 oz) evaporated milk
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a small bowl, empty the orange Jell-O powder. Pour in 1 cup of boiling water and whisk until the powder is completely dissolved—about 2 minutes. Then stir in 1/2 cup of cold water. Pour this mixture evenly into your cups, filling each about one-third full. Place the cups on a tray and refrigerate for at least 1 hour, or until the gelatin is firm to the touch.
  2. While the orange layer is setting, make the creamy middle. In a small bowl, sprinkle the unflavored gelatin over 1/4 cup of cold water. Let it sit for about 5 minutes—it’ll look like a weird, spongy mess. That’s normal. In a small saucepan, combine the evaporated milk and sugar over medium heat. Stir until the sugar dissolves and the milk is warm but not boiling—about 3 minutes. Remove from heat and stir in the vanilla extract.   3. Once the orange layer is firm and the creamy mixture is cool, arrange your cups at a 45-degree angle—prop them against the edge of a baking dish or use a muffin tin. Gently spoon the creamy mixture into each cup, filling them about halfway up the angled side. You want the creamy layer to cover the orange layer completely but sit at an angle. Refrigerate for about 45 minutes, or until firm.
  4. While the creamy layer sets, prepare the lemon Jell-O the same way: dissolve the powder in 1 cup of boiling water, then stir in 1/2 cup of cold water. Let this cool to room temperature—about 10 minutes.
  5. Once the creamy layer is firm, carefully straighten your cups. Gently pour the cooled yellow Jell-O over the creamy layer, filling the cups almost to the top. You want to leave a tiny gap so they don’t spill. Refrigerate for at least 2 hours, or until completely set. Overnight is even better if you have the time.
